What Sorbic Acid does

Sorbic acid was first found in rowan berries, the small fruit of the mountain ash tree. Today it is usually made in a lab, which gives a consistent, pure form. Formulators add it to water-based products because mold and yeast can grow in them, especially after a jar is opened. It works best when a formula is slightly acidic.

On its own, sorbic acid is a white powder that dissolves only a little in water, so formulators often use its salt, potassium sorbate, which mixes in more easily. In a finished product it usually does not change scent, color, or texture much. It is often paired with other preservatives so a formula stays fresh longer.

Is sorbic acid safe for skin?

Sorbic acid is generally well tolerated and is used in many rinse-off and leave-on products. Like any ingredient, a few people may notice irritation. If a product stings or turns red, stop using it and ask a dermatologist for advice.

Is sorbic acid the same as potassium sorbate?

They are closely related. Potassium sorbate is the potassium salt of sorbic acid, made to dissolve more easily in water. Labels may list either one. Sorbic acid is most active in slightly acidic formulas, so the pH, or acidity, of a product matters.
